Creamy Kimchi Udon

Need an easy but satisfying meal? You must try this creamy kimchi udon! You can make this recipe in under 30 minutes with only one pan. No udon? No problem! You can replace the udon with any pasta or noodles if you like! I imagine this would pair well with fettuccine noodles. If you're using udon noodles, I recommend using the frozen or vacuum sealed variety because they're already pre-cooked. All you have to do is pour hot water over them or boil them for 1-2 minutes, or until the noodles separate. You can also make this recipe vegetarian by omitting the bacon (which I sometimes do)! Instructions

Step 1
In a pan over medium low heat, cook your bacon until slightly crisp.
Step 2
Add your onions and sauté until translucent (2-3 minutes).
Step 3
Once the onions are translucent, add in the minced garlic and sauté for 60 seconds or until fragrant.
Step 4
After, add in your chopped kimchi and season with gochujang, soy sauce and sugar.
Step 5
Saute this mixture for 5 minutes over medium low heat.
Step 6
Then, add in the heavy cream and sesame oil.
Step 7
Gently simmer the sauce for 5 additional minutes.
Step 8
Add the cooked udon noodles into the sauce and allow for them to cook in the sauce for 3-4 minutes or until the udon noodles have absorbed some of the sauce.
Step 9
Garnish with green onions and enjoy!
