Instructions
Step 1
Line a baking sheet with parchment paper or foil. In a medium bowl, whisk together vinegar, 1.5 tbsp oil, 1/4 tsp salt, and pepper.
Step 2
Preheat oven to 400. Arrange mushrooms on sheet and pour marinade over them. Marinade 30 minutes.
Step 3
Bake mushrooms for 20 minutes, turning at halfway point.
Step 4
Heat 1.5 tbsp oil in large skillet. Add onion and 1/2 tsp salt and saute until golden, 5-6 minutes. Add garlic and saute 30 seconds. Add spinach and red pepper and saute about 5 minutes.
Step 5
Remove mushrooms from oven and turn on broiler.
Step 6
Carefully pour liquid from baking sheet into skillet mixture.
Step 7
Ensure stem side of mushrooms is facing up. Spoon mixture into each mushroom. Sprinkle 1 tbsp of cheese over each.
Step 8
Broil until golden brown, 3-4 minutes.
