Ingredients

2 teaspoonsoil

2garlic cloves
minced

1onion
small, diced

400glean ground beef
2canned chipotle chilies in adobo
plus 2 tablespoons sauce from can

425gcan black beans
drained and rinsed

100gfresh baby spinach
roughly chopped

4whole wheat tortillas

Shredded cheese blend
including cheddar
Instructions
Step 1
Heat oil in a large skillet over medium heat. Add garlic and onion and cook until softened, about 3 minutes. Add beef and cook until well browned, about 6 minutes.
Step 2
Add chopped chiles, adobo sauce, and beans to beef mixture. Cook until beans are warmed through, about 3 minutes. Add spinach, stir to combine, and cook until wilted, 2-3 minutes more.
Step 3
Lay one tortilla on a serving plate. Sprinkle about 1/4 cup cheese down the center of the tortilla, microwave for 30 seconds, and then top with some of the beef mixture. Be careful not to overstuffed. Fold two sides of the tortilla toward the center, then roll up to form the burrito. Repeat with remaining tortillas and filling. Serve hot.
