Instructions

Step 1
1. Preheat oven to 180º and line a large tray/baking dish with paper 2. Cook rice according to instructions (can also use 1 pouch of microwave rice) 3. Cut capsicums in half & remove the seeds & place onto the baking tray 4. Dice onion & chop mushrooms 5. In a frying pan fry off garlic & onion until soft before adding the mushrooms 6. Fry for a few minutes before adding spices, spinach & cooked rice 7. Cook until spinach wilts, spoon evenly between the capsicums & top with the crumbled feta 8. Place into the oven for 20-25 minutes or until capsicums are cooked
