Instructions
Step 1
Preheat the oven to 175 degrees Celsius
fan-forced.
Step 2
In a bowl, mix the wet ingredients together.
Step 3
In another large bowl, add the flour & sugar

Then pour this into the dry mix. Gently fold until no flour remains and the batter is thick
Step 5
Transfer the cake batter into the lined baking tin
Step 6
Bake in the oven for 35 mins until a knife inserted comes out clean
Step 7
Remove the loaf from the oven and allow it to fully cool before icing
Step 8
Make the icing: Whisk in the icing sugar and lemon juice until smooth and thick
Step 9
Spread the icing over the top of the loaf. Optional sprinkle coconut and sliced lemon on top to decorate
