Instructions
Step 1
Heat a non-stick pan over medium heat. Add mushrooms and cook until soft. Remove from pan and set aside.
Step 2
Lightly whisk eggs and season with spices. Pour egg into non-stick pan over medium heat and scramble until cooked through but light and fluffy.
Step 3
Add mushrooms back into pan, along with avocado and cheese. Stir to combine.
Step 4
Place cheesy scrambled egg on tortilla and season to taste. Roll or fold to eat.
Step 5
Follow with a piece of fruit.
