Ingredients
4 servings
300gorzo
uncooked
1red pepper
diced
3carrots
large, diced
200ggreen beans
chopped
1red onion
diced
1can chickpeas
rinsed and drained
60gfeta
parsley
garnish
for the dressing
Instructions
Step 1
Preheat oven to 220 °C.
Step 2
Dice all veggies and add to a baking tray. Drizzle with olive oil and season with salt and pepper.
Step 3
Roast in the oven for 30 mins.
Step 4
Cook the orzo (boil like pasta). Warm chickpeas (drained and rinsed) in the microwave and season with salt and pepper.
Step 5
Add roasted veggies, feta, chickpeas and the orzo to a large container/bowl.
Step 6
In a small jug/bowl, add the hummus, lemon juice, olive oil, water, garlic powder, salt and pepper. Mix well.
Step 7
Pour the dressing over the salad in the bowl and stir well to coat. Enjoy.
