170 gramssour cream
1egg
25 gramssugar
495 gramsbread flour
9 gramsSalt
25 gramsbutter
40 gramsmilk
5 gramsInstant Yeast
Tangzhong
Filling
Instructions
Step 1
Roast your garlic. Cut each head in half and drizzle with olive oil, enclose in aluminum foil. Bake at 45-1 hour at 400 Fahrenheit until soft and golden. Cool to room temperature.
Step 2
Make your tangzhong. Whisk all tangzhong ingredients together in a small pot. Stir continuously over medium heat until it resembles mashed potatoes. Remove from heat and let it cool for 5 minutes
Step 3
In the bowl of a stand mixer, add the tangzhong and all other dough ingredients except for the butter. Using the dough hook attachment, mix for 5 minutes until the dough comes together. Add the butter and mix fir 8-10 minutes or until a rough window pane is achieved.
Step 4
Shake the dough into a ball, place into a bowl, cover and let it rise for 1.5 hours or until almost doubled in size
Step 5
Deflate the dough and divide into 9 equal sections. Form into balls. Cover and let rest for 10 minutes. Meanwhile lightly grease a 9”x9” pan and make your filling by combining all filling ingredients. If your butter is too soft, stick it in the fridge to chill. It should be spreadable but not melting
Step 6
Doing one at a time, roll the dough into a long oval ~8” long. Spread some of the filling on top and then cut slits lengthwise as shown in the video. (Don’t cut all the way). Then grab both ends and twist. Form it into a knot place into the pan and repeat
Step 7
Cover and let rise for 30 minutes or until noticeably puffy. Preheat oven to 350 Fahrenheit.
Step 8
Lightly brush with an egg wash before baking. Bake for 25-30 minutes or until the top is golden
Step 9
Optional:brush with one tablespoon melted butter mixed with one tablespoon honey
