Step 1

Wash the baby spinach. Wash and cut tomatoes into 1/4 inch pieces.
Marinate tomatoes
Step 2

Whisk together vinegar, oil, and sugar in a medium bowl. Add tomatoes. Season with salt and pepper, then toss to coat.
Finish and serve
Step 3

Add spinach to the bowl with tomatoes. Toss to combine. Divide onto two plates and serve.
