Instructions
Step 1
Shuck and clean the corn.
Butter the corn and season with salt and pepper.
Wrap the corn in tin foil and grill until slightly charred.
Let cool and then cut the corn off the cob into a bowl. Set aside
Step 2
Preheat oven to 425
Step 3
Heat a large drizzle of avocado oil in an oven safe pan.
Once hot, add the onion (red and whites) and Jalapeños.
Sauté until onions are tender and translucent. Add the tomatoes. Continue cooking for 1-2 minutes.
Step 4
Add the corn, mayo, siracha, cilantro, salt and pepper to taste. Stir until combined.
Stir in the mozzarella.
Step 5
Add to 425 degree oven for 10-15 minutes until cheese is melted.
Serve with tortilla chips or wonton chips.
