Step 1
Rub salmon with oil of choice and seasonings of choice (I used a citrus seasoning blend)
Step 2
Bake salmon at 400 for about 12 minutes, or cooked to your preference
Step 3
Cook brown rice according to package
Step 4
Once rice is done, empty over chopped spinach in a bowl and cover
Step 5
Prepare vinaigrette - oil, white wine vinegar, grated garlic clove, salt, pepper and crushed red pepper
Step 6
Once rice has wilted the spinach, pour vinaigrette over the rice. Top with chopped tomato and feta
