Ingredients
4 servings

2white potatoes
large, thinly sliced

0.5white onion
diced

1red bell pepper
diced
0.5 packagevegan cashew cheese
diced

1 teaspoondried tarragon
or fresh

¼ teaspoondried basil

¼ teaspoongarlic powder

0.5 Tablespoonharissa paste

salt
as desired

black pepper
as desired

1 tablespoonolive oil

⅓ cupveggie broth
or 1/3 cup water with 1 teaspoon Umami mushroom spice blend 's

yogurt
to serve, optional
Instructions
Step 1
Layer slice potatoes in baking dish (deep pie plate works well). Add a splash of water and microwave about 5 minutes.
Step 2
In separate bowl, toss onion, red pepper, vegan cheese and spices
Step 3
In baking dish, add olive oil and mix with potatoes
Step 4
Layer veggie/cheese mix on top of potatoes
Step 5
Mix water w/Umami spice or veggie stock with harissa paste. Pour over the veggie mix.
Step 6
Bake at 400 F for 25 to 30 minutes. Check at 20 minutes to make sure top isn't burning. May want to turn down to 350F.
Step 7
Serve with a dollop of plain yogurt, if desired
