Step 1
1. Preheat oven to 180° & line baking tray
2. Cut all vegetables into bite sized pieces 3. Place capsicum, chickpeas & zucchini onto a baking tray & drizzle with 1tbsp of olive oil & bake until chickpeas are crispy & other vegetables are soft 4. Cook cous cous according to instructions 5. In a large bowl mix together cous cous & all vegetables with remaining olive oil & serve
