Instructions
Step 1
1. Preheat the oven to 350 degrees F.

2. In a large mixing bowl, peel and mash 3 ripe bananas with a potato masher or a fork.

3. Stir the sugar, vegetable oil and almond milk with the mashed bananas until well combined.
Step 4
4. Next fold in the flour, cinnamon, baking powder, baking soda and salt. Stir until just combined. Do not overmix, it’s totally fine if there are some lumps.
Step 5
5. Toss the blueberries in 1 tablespoon of flour before folding them in the batter (this will prevent them from sinking to the bottom) Fold in a cup of fresh blueberries (or frozen).
Step 6
6. Spray the loaf pan with avocado spray, Transfer the batter in, place a sliced in half lengthwise banana on top, also some blueberries. Then bake in the center rack of the oven for 55 to 60 minutes or until a toothpick comes out clean.
Step 7
7. Allow the bread to cool down before slicing (about 15 to 20 minutes) and enjoy.
