Step 1
Grease bottom and half inch up sides of pan.

In medium mixing bowl combine flour, baking powder, baking soda, cinnamon, and salt.

Make a well in the center of the dry mixture and set aside.

In another bowl combine egg, bananas, sugar, and cooking oil.

Add egg mixture to dry mixture, stir just until moistened. Batter should be lumpy.

Spoon batter into metal pan (if not using metal pan the bread will be to dry.)

Bake at 350° for 50-55 minutes. (You will have to lower temp if using glass)

Cool in pan on a wire rack for 10 minutes.

Remove loaf from pan and complete cooling on rack.

Wrap in plastic wrap and store overnight before slicing.
