Step 1
Put all ingredients into pot, bring to boil on high, skim (put peppercorn now if using)
Step 2
Reduce heat to medium, simmer for 40min+ without lid.
Step 3
Reduce soup on high to amount barely immersing soy beans.
Step 4
Store in a box and refrigerate. Best when consumed at least a day after.
