Instructions
Step 1
Bring stock to the boil in a medium saucepan. Reduce heat to low.
Step 2
Cook bacon and mushrooms in a large saucepan over medium-high heat, stirring, for 8 mins or until golden brown. Transfer to bowl.
Step 3
Heat butter in same pan. Add rice, garlic and chilli. Stir to coat in butter mixture.
Step 4
Stir in 1/2 cup hot stock. Cook, stirring, over medium heat until liquid is absorbed.
Step 5
Continue adding stock, 1/2 cup at a time, stirring, until liquid is absorbed after each addition. (total cooking time should be about 20 mins or until rice is just tender.
