Spanish Chicken and Rice

You don’t get much chicke for your money these days... however chicken drumsticks are one of the most economical cuts..In a 1k pack you usually get 8..depending on their weight.
I’ve cooked the drumsticks in the air fryer but you can roast in the oven for 30-40 mins.

Step 1
Put a few slashes on your drumstick and place in a bowl. Mix 2 tsp paprika, seasoning and 1 tsp mixed herbs with 1 tbsp oil and rub the mixture into the drumsticks..you can marinate them for an hour in the fridge if you wish.

Put drumsticks in the air fryer for 20 mins 180oc.

Step 3
Heat oil in a large frying pan and fry onions, red pepper carrots, and courgette until starting to soften..add garlic and 1 tsp paprika and 1 tsp mixed hebs fry for another min. Season.
Step 4
Add rice and stir well to coat the rice.
Step 5
Stir in tomatoes, and stock put a lid on pan and simmer for about 30-40 mins or until rice has absorbed all the liquid. Keep checking and stirring.. Season to taste.
