50gUnsalted butter
melted
200ggranulated sugar
⅔ Tbsplime zest
3eggs
150mlheavy cream
1 Tbsplime juice
200gall-purpose flour
1 tspbaking powder
½ tspbaking soda
¼ tspsalt

Instructions
Step 1
Preheat oven to 170°C
Step 2
Melt the butter
Step 3
Mix the butter with the sugar and the lime zest
Step 4
Whisk in the eggs
Step 5
Add the heavy cream and lime juice
Step 6
Stir in the dry ingredients (flour, baking powder, baking soda and salt)
Step 7
Pour the batter into a buttered loaf pan
Step 8
Bake in preheated oven for 50 min
Step 9
Cool in loaf pan 10 minutes before transferring to a wire rack to cool completely
Glaze
Step 10
Mix together the powdered sugar and lime zest
Step 11
Drizzle the lime glaze over the cool cake
