Instructions for immersion blender:

Step 1
Add all the ingredients except the avocado oil in a blender jar. Leave the oil for last.

Pour the avocado oil into the blender jar and, allow the mixture to rest for one minute.

Carefully place the blender inside the jar, ensuring it touches the bottom.
Step 4
Start the blender and keep it firmly at the bottom for at least 10 seconds. This will facilitate the emulsification process.

Once you see the mixture getting thicker, lift and lower the blender slowly, making sure not to go above the top of the mixture. Continue doing this until all the ingredients are thoroughly combined.

Season the mayonnaise with an additional ⅛ teaspoon of pink salt and pepper to taste.

Transfer your homemade mayo to a clean glass container. Store it in the refrigerator.

Instructions for regular blender:

Start the blender on low speed. Once the ingredients combine, slowly begin pouring the avocado oil into the blender jar. Imagine a thin thread extending from your oil bottle to the blender. Using the center cap of the blender lid to pour the oil will help avoid splashes.

The first 15 seconds are crucial for the mayo's consistency. Pour the oil slowly, allowing the emulsification process to begin.

As the mayonnaise forms, you can gradually add more oil to the thin thread. Keep this until all the ingredients are thoroughly combined, and the mayo reaches the desired consistency.
