Creamy High Protein Mac + Cheese
Sauce:
1 cup blended cottage cheese (place in food processor or blender until smooth)
1 cup shredded cheese or choice
1/4 cup water or milk
Paprika
Salt
Pepper
Garlic Powder
One 12oz packet of elbow noodles (you can use chickpea noodles for more protein + fiber)
1. Boil water and cook noodles
2. Blend cottage cheese
3. Add cottage cheese, shredded cheese, spices, and milk or water to a pan over medium heat
4. Mix until cheese melts and sauce is blended
5. Add cooked noodles and mix until well coated
6. Serve with broccoli and chicken sausage for a more balanced meal!
