�Slow Cooker Recipe – Thai Chicken (Pad Thai Inspired)��Ingredients:
Main:
2-3 lbs boneless skinless Chicken Thighs 1 1/2 cup Red Bell Pepper, diced 1 1/2 cups frozen diced onions 1/2 cup Chicken Broth 1/4 cup Soy Sauce Sauce (Blend together): 1 tbsp Cumin 1 1/2 tsp Garlic Powder 1/2 tsp Red Pepper Flakes 1/2 tsp Salt 1/4 tsp Black Pepper 1 tbsp Corn Starch 2/3 cup Peanut Butter 1 tbsp Soy Sauce 1/3 cup Fresh Lime Juice, juice from 2-3 limes For Serving: 1 bunch green onion, diced 1 (14 oz) box rice noodles �Cooking Directions:�Step 1: Add main ingredients to slow cooker.
Step 2: Cook on low 4-6 hours
Step 3: Blend together sauce ingredients and set to the side. Step 4: With 1 hour cook time remaining, stir sauce into slow cooker. Step 5: Before serving, cook rice noodles according to package, shred chicken and stir in noodles. Step 6: Serve and enjoy.
