Instructions
Step 1
Place the chickpeas in a large bowl and soak in water overnight. Water should cover chickpeas by at least 2 inches.
Step 2
Rinse the chickpeas and transfer them to the pot. Add water, onion, bay leaves, baking soda and salt. On high heat bring it to the boil, then reduce heat to low and boil for 35-40 minutes or until chickpeas are tender.
Step 3
Discard the onion and bay leaves. Drain the chickpeas, transfer them to the bowl and pour in cold water. Take out all skin with the strainer.
Step 4
Drain and transfer the chickpeas to the food processor or high-powered blender, add lemon juice and start blending, then add ice cubes, one at a time. Blend until smooth, then add tahini, garlic, and salt to taste. Continue to blend until you reach desired consistency, stopping to scrape down any tahini stuck to the sides and bottom of the processor as necessary.
Step 5
Scrape the hummus into a serving bowl or platter, and use a spoon to create nice swooshes on top. Drizzle with olive oil, and sprinkle with paprika and cumin.

Serve with flatbread
