Ingredients

For the Turkey Filling
16 ouncesground turkey
1onion
small, finely chopped
2cloves garlic
minced
1 tablespoonolive oil
15 ouncesblack beans
drained, and rinsed
1 cupcorn kernels
frozen or canned, drained
1 teaspoonchili powder
½ teaspoonground cumin
salt
to taste
pepper
to taste
For Serving
Instructions
Prepare the Turkey Filling:
Step 1
In a large skillet, heat the olive oil over medium-high heat.

Add the chopped onion and garlic and sauté for about 2-3 minutes until they become fragrant and translucent.
Cook the Turkey:

Add the ground turkey to the skillet and cook, breaking it apart with a spoon, until it's browned and cooked through for about 5-7 minutes.
Add Beans and Corn:

Stir in the black beans and corn kernels.

Cook for an additional 2-3 minutes to heat them through.
Season:

Add the chili powder, ground cumin, salt, and pepper to the turkey mixture.

Stir well to combine and let it cook for another 2 minutes.
Warm the Taco Shells:

While the turkey filling is cooking, warm the taco shells or tortillas according to the package instructions.
Serve:

Spoon the turkey filling into the warm taco shells.

Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, sour cream, salsa, sliced black olives (if desired), and sliced green onions (if desired).
