Instructions

Season the Roast:

Begin by patting the roast dry with paper towels.

Craft a delectable rub by combining minced garlic, salt, black pepper, rosemary, thyme, paprika, and onion powder.

Massage the seasoning mixture evenly over the entire roast.

Sear the Roast

Elevate the roast's flavor by searing it using your pressure cooker's sauté function. Heat olive oil in the pressure cooker and sear the roast on all sides until it forms a delightful crust. This step is optional but highly recommended for an enhanced taste experience.

Pressure Cook the Roast:

Nestle the seasoned roast into the pressure cooker.

Pour in the beef broth and Luxardo liqueur

Seal the pressure cooker and set it to cook at high pressure. Cooking times will vary based on the meat type and size. Consult your pressure cooker's manual for precise cooking durations.

Making the Gravy

Extract the cooked roast from the pressure cooker, leaving the drippings to be separated in to a bowl

Activate the sauté function on your pressure cooker, if available.

Within the pressure cooker, introduce 2 tablespoons of all-purpose flour to form a roux. Stir consistently until it takes on a light golden hue. Then begin to slowly add the drippings to the roux, stirring continuously. Add the drippings a 1/4cup at a time and mix it in so that you do not break the roux or cause it to clump.

Gradually infuse Luxardo liqueur (if not used earlier) and, if necessary, more beef broth or water, while stirring to incorporate the flavors and release any flavorful remnants adhered to the cooker's base.

Continue to stir and cook the gravy until it reaches your preferred thickness. Adjust the consistency with additional liquid if required. Season the gravy with salt and pepper to your liking.
