Crunchy Chickpeas with Aqua faba Curry sauce

This is how I like to use a whole jar/can of chickpeas including the juice . They make a great healthy snack alternative and they are nutritious and tasty

Instructions

Step 1
Strain the chickpeas into a sieve over a large bowl .

In another bowl add crushed garlic 2 tbsp lemon juice chili powder garam masala turmeric a pinch of salt and pepper and olive oil . Mix to combine then toss in the chickpeas and coat then in the spices

Step 3
Bake at 180 c fan setting 360 f for 3 minutes and move them around one to two times in between to make sure they get crispy and golden
Step 4
Pour the aqua faba juice ( should be just under a cup ) into an emersion jug then add 1 tbsp lemon juice a pinch of salt and pepper curry powder chili powder and garlic powder blend then add maple syrup to sweeten .

Step 5
Pour the aqua faba mixture into a pan bring to a simmer then mix a little water with 1 tbsp cornstarch stir until smooth and add to the pan. Mix until it thickens then take it off the heat

Let the crunchy chickpeas cool slightly then serve with the sauce . Enjoy
