Creamy Chickpea with Coconut Milk

Ingredients

4 servings

• 2 cans of chickpeas (rinsed and strained).
2cans of chickpeas
rinsed and strained
1red onion
medium, chopped
3 Tbsptomato paste
• Salt and pepper to taste.

2 tspcurry powder
1 tspcumin
1 tsppaprika
• 1/4 cup cilantro chopped.
¼ cupcilantro

• 3 garlic cloves chopped.

• 1/2 tsp cayenne.
½ tspcayenne
1can of Coconut milk

Instructions

Step 1
1. Sauté onions in a pan.
Step 2
2. Once the onions turns translucent, add chopped garlic, salt, pepper, cumin, curry powder and cayenne.
Step 3
3. Once all the spices are blended, add tomato paste.
Step 4
4. Then add rinsed chickpeas and mix it well.
Step 5
5. Once all the ingredients are blended and mixed well, add 1/4 cup of water to loosen the paste.
Step 6
6. Let it cook for about 5 to 7 minutes in medium heat.
Step 7
7. Bring the heat to simmer and stir in the coconut milk. cook until the chickpeas are soft and creamy curry consistency.
Step 8
8. Serve it with rice or naan.
