Instructions

Preparation

Step 1
Chop the peppers into inch-cubes. Slice the garlic bulb into slices (not minced). Slice the courgette into centimeter-thick slices. Slice the chorizo into 3/4cm thick slices.

Cooking

Step 2
Heat olive oil on pan.
Step 3
Put the peppers and courgettes into the pan with olive oil and cook under low heat until they start to become soft.
Step 4
Add the canned chopped tomatoes and smoked paprika and heat tomatoes until it is low simmering.
Step 5
Add salt and pepper to taste but do not add too much salt because chorizo is already salty.
Step 6
Add the garlic into the tomato sauce.
Step 7
Add West Indian Hot Pepper Sauce to taste and stir into the sauce. Taste the heat at this stage.
Step 8
Add sliced chorizo to simmering tomato sauce and cook until pasta is boiled (roughly 15 minutes).
Step 9
Boil penne pasta whilst tomato sauce is simmering for around 15 minutes.
Step 10
Drain the penne, and serve the tomato sauce on top. Enjoy!
