Instructions

Step 1
PREP: - Crush the basil leaves (leave some aside to garnish) in a pestle and mortar and add to the garlic mayo. Mix and set aside. - Halve the potatoes and carrots to suit. - Season the fish with sea salt.
Step 2
Boil the potatoes for 10 minutes
Step 3
Add the carrots and cook for a further 10 minutes. ALSO, season the cod with sea salt and put into the oven for 10 minutes on 189dg
Step 4
Serve up the veg then the fish and sprinkle with black pepper. Then add the Aioli in a dollop and position some basil leaves on top.
