Instructions
Step 1
1. Wash and drain spinach and place in a pot of lightly salted boiling water to cook until wilted. Once wilted, drain and take off heat.
Step 2
2. With a dash of olive oil, fry the onions until lightly translucent, and then add garlic and mother-in-law chilli and fry until fragrant.
Step 3
3. Add tomato from can and stir to mix ingredients. Adjust for salt and pepper.

4. Now add in the spinach and lower heat to allow to simmer for 5-7 min.
Step 5
5. Break a couple of slabs of feta cheese into the mixture and mix them in. Enjoy the yummy goodness...

This is really quick and easy to make and is delicious to boot.
The flavor combination works super well and you can always add some chilli or a tsp of mother-in-law spice 😉 (🇿🇦ns will know...) or gochugaru if you want a hit of heat as well. Works well as a side dish, but I've found myself going to the fridge to demolish leftovers at night... 🙄
