Instructions
Step 1
Roast whole eggplants on a baking sheet lined with parchment paper at 200C/400F for 20mins or until the skin starts to look old.
Step 2
Place the eggplant in a bowl and cover for 5 to 10 minutes. Open and let stand for a few minutes to cool off.
Step 3
Peel skin off of eggplants and then tear eggplant into strips.
Step 4
Put the eggplant strips on the baking sheet lined with parchment paper, sprinkle with spices, and then mix well.
Step 5
Bake at 200C/400F for 20 minutes.
Step 6
Take out of the oven and mix barbeque sauce with the eggplant. Serve with tacos and cilantro.
