Instructions
Step 1
Rub the beef with salt and pepper (or barbacoa rub) and set aside
Step 2
Make the guacamole: peel and smash avocados, season with lime, salt and pepper (optional add scallions or cumin)
Step 3
Chop radishes finely
Step 4
Grill scallions and jalapeno peppers on an open toaster until charred. Cut the scallions roughly. Remove charred skin and seeds from jalapenos, chop roughly.
Step 5
Grill the meat until well charred (Oaxaca style barbecue is typically well done, but that's up to your taste)
Step 6
When the meat is done and rested for 10min, cut it finely against the direction of the muscles fibers to make it easier more tender.
Step 7
Combine the meat, grilled scallions and jalapeno with lime, salt and pepper to taste.
Step 8
Heat up the tacos on the grill
Step 9
Serve the tacos, meat, guacamole and radishes separately with lime wedges, and coriander optional.
Step 10
For assembly: add meat to tacos, then guacamole and garnish with radishes, squiz of lime/coriander optional
