Ingredients
5 servings
½ cupbutter
divide into two
¼ cupflour
1 cupchicken stock
½ cupmilk
¾ cupsweet potato
½ cupspinach
blanched
½ cupCheese
grated
¾ cupcarrot
½ cuponions
1 Tbspgarlic
¼ cupcelery
1 tspthyme
1 tsporegano
shimeji mushrooms
500 gramsSmoked Turkey Breast
U.S, cubed
Quick Puff Pastry
250 gramsall purpose flour
200 gramsbutter
very cold
125mlwater
ice
1 tspsalt
Instructions
Step 1
Puff Pastry Mix together cold cubed butter, salt and flour until the butter is pea sized.
Step 2
Add very cold water and mix until it comes together. Note: - The butter and water should be iced cold for perfect puff pastry consistency - Do not over mix, you just want the dough to come together where you can still see big chunks of butter
Step 3
Transfer dough on floured surface. Roll out 20 x 8 rectangle. make double book fold . Turn and make another double book fold. Make sure that the dough isnt stuck on your table by dusting it lightly
Step 4
Rest dough in the refrigerator for 30 minutes and make two more double book folds.
Step 5
Rest the dough for another 30 minutes, then roll out and use. 4 book folds in total.
Step 6
Filling: Melt 1/4 cup butter and sautee garlic, onions, celery, carrots and sweet potatoes.
Step 7
Add the US Smoked Turkey, Thyme, oregano and chicken stock. Simmer until vegetables are soft.
Step 8
Add shimeji mushrooms last
Step 9
Mix together 1/4 cup butter and flour into a paste. Add this paste and the milk to the turkey. Note: the butter paste will hep thicken the stock

Let the turkey before assembling

Assembly: Let out half of the prepared puff pastry. Lightly dust work surface and start rolling the dough into a circle or the shape that would adhere to your chosen baking dish Roll it out into 1/8 inch thick
Step 12
Layer in a baking dish, turkey filling, wilted spinach, and cheese.
Step 13
Top with puff pastry, make some slits on the puff pastry to serve as vent when baking. brush with eggwash. Bake at 420F for 30mins until golden.
