Instructions

Step 1
Sprinkle chicken with season salt and paprika on both sides. Add raisins to hot tab water and let rest, than drain. In a medium sauce pan, melt butter and oil on high heat. Add onions and sauté for a few minutes, stirring often. Scrap onions to the side in the pot and add chicken, skin side down. Brown about 4-5 minutes on each side. Turn the heat down a little to keep them from burning. Now add brown sugar and stir until all sides of the chicken are well coated. Add drained raisins and enough chicken stock to just cover the chicken in the pot. Bring to a boil, than cover and turn down heat to medium high heat so there is a gentle simmer. Simmer for 20 minutes stirring often. Add the pinch of saffron and cook another 10 minutes until chicken test fully cooked inside. Enjoy with French bread dipped into the rich sauce. Yummy!
