Instructions
Step 1
Place fresh or defrosted spinach into a large bowl and cover with boiling water . Blanch 5 minutes then drain and squeeze out and set aside .

To a pan with a little oil add one diced onion and cook 3 minutes then add sliced garlic grated ginger and a sliced green chili and cook a minute . Next add 1 tsp cumin seeds and cook another two minutes . Add garam masala chili powder and turmeric and let that toast 30 seconds and mix all together then add a diced tomatoe season with salt and pepper and let it cook down 5 minutes

Step 3
Add the spinach and tomato spice mix to a blender with about 150-200 ml water and blend until smooth
Step 4
Slice the paneer into cubes then fry on a pan on both sides until golden . Add in the spinach purée bring to a boil then lower to medium low heat and cook covered 15 minutes . Finally stir in the cream and serve ! I garnish mine with Koriander as I love the flavor
