An incredibly delicious Spinach curry that is made in under 20 minutes!

Instructions
Step 1
If using fresh spinach blanch for 1 minute, then chill in ice water.
Step 2
Toast the cumin seeds in a little oil until fragrant. Add the onion and sauté until translucent, add the remaining aromatics (garlic, ginger, chili) and sauté for a couple more minutes. Add the ground spices and cook for 1 more minute, stirring constantly.
Step 3
In a blender or food processor blend the blanched (or frozen) spinach with the tomatoes into a fine purée.
Step 4
Deglaze the pan with the tomato spinach purée and cook for about 5 minutes.
Step 5
Optionally add some vegan cream or almond butter, then stir in the cubed paneer (or alternative).
Step 6
Serve with rice, the flatbread of your choice or however you prefer and enjoy!
