4 Tbspextra virgin olive oil

3white onions
medium, or yellow, peeled and chopped

6garlic cloves
peeled and finely chopped

½ tspground cumin

½ tspground cinnamon

400gminced lamb

1 x 400gtin chopped tomatoes

1 Tbsptomato purée

sea salt

freshly ground black pepper

75gpistachios

1 heaped tspred chilli
finely sliced medium-hot

500ggreen beans
trimmed and halved

200gfeta
cut into 1-2cm dice

2 handfulsfresh mint
coarsely chopped
Instructions
Step 1
Heat 2 tablespoons of oil in a large flameproof casserole dish over a medium-high heat. Add the onion and fry for 7–10 minutes until golden, stirring occasionally and adding the garlic a minute or two before the end.
Step 2
Stir in the spices, then add the mince and continue to fry until it changes colour. Add the tomatoes, tomato purée, 400ml water and plenty of seasoning. Bring to the boil, then cover and cook over a low heat for 45 minutes.
Step 3
Stir in the pistachios, chilli and green beans, cover and cook for another 15–20 minutes or until the beans are tender, stirring halfway through.
Step 4
Preheat the grill to high. Toss the feta and mint with a couple of tablespoons of oil in a bowl, scatter this over the stew and pop the casserole dish under the grill until the cheese is golden. Serve straight away.
