Lasagna Soup

Who else loves soup season?!🍲 It always feels like such an easy meal because it’s made in one pot & you have endless opportunities with flavors!👌🏻 This lasagna soup deserves to be at the top of your list this fall! It’s so comforting & delicious and I have a feeling will become a new fav🍲 Ingredients: -1 lb ground beef or Italian sausage -1 onion, chopped -3 cloves garlic, minced -14 oz can diced tomatoes -1 cup marinara -2 tbsp tomato paste -2 cups beef broth -1 tsp oregano -1 tsp sea salt -1 tsp black pepper -2 cups broken lasagna noodles (about 8 lasagna sheets) -1 cup ricotta cheese -1 cup shredded mozzarella cheese -parmesan cheese, for topping (optional) -Fresh basil & parsley, for garnish (optional) Instructions: 1. In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned & cooked through. Season with salt & black pepper.  2. Add the onion to the pot & sautĂ© for about 3-5 min. Stir in the minced garlic & cook for an additional min. 3. Pour in the diced tomatoes, marinara, tomato paste and beef broth. Stir to combine. Season with oregano, sea salt and black pepper. 4. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes to allow the flavors to meld. 5. While the soup is simmering, break the lasagna noodles into smaller pieces. Add the broken lasagna noodles to the simmering soup. Continue to simmer for another until the noodles are cooked al dente and the soup has thickened to your liking. 6. Add the ricotta & mozzarella & stir to combine. 7. Finish with a generous sprinkle of Parmesan & fresh basil & parsley. 8. Serve hot & enjoy!

Instructions

Step 1
