Step 1
1. With a mixer, beat egg yolks and sugar until lemon colored. Mix in the coconut milk and beat another minute. Add the flour, one cup at a time until the dough can be handled. Knead the dough with your hands until smooth.
Step 2
2. Divide the dough into small pieces and roll into circles. Press each circle into a San Nicolas moulder. Invert onto baking sheet. Bake in a 350ยฐF oven about 10-15 minutes or until lightly browned. Turn oven off. Cover cookies with Manila paper and leave to dry in the oven for 30 minutes. Drying gives texture and prolongs the freshness of the cookies.
Step 3
3. Remove from oven to cool. Store in an airtight container.
