Tweaked version of Jamie Oliver's Smoked Salmon Pasta to make it more Student friendly! Changed the pasta to dried and spinach to frozen peas, adjusted the method to suit!

Instructions
Step 1
Boil the kettle and put your pasta on to cook 10-15mins.
Step 2
Trim the spring onions (Peel off the top layer and cut of the dark green top) then finely chop.
Step 3
Seperate the salmon trimmings with a fork. Finely grate the lemon zest, then the Parmesan, keeping them separate. If you've got pre grated cheese, just miss this step.
Step 4
Put your frying pan on a high heat.
Step 5
Once hot, put a little drizzle of oil into the pan with the spring onions, peas, half the chopped salmon, and lemon zest. Cook for a couple of mins.
Step 6
Add a desert spoon of water, Let it bubble away for another couple of minutes until you’ve got a nice sauce, stirring regularly and loosening with an extra splash of water, if needed.
Step 7
Turn the heat off, squeeze in the lemon juice, and stir in the cottage cheese and Parmesan.
Step 8
Once cooked, drain your pasta and add to the pan, mix through the sauce, serve and add the remaining salmon on top.
