Step 1
This is a recipe for used leftover mash potatoes . If you are starting from scratch cook 500 grams potatoes then mash with a knob of butter salt pepper and 80 ml cream . Then let them go cold so they are easier to handle and mix into a dough

To the potatoes add 2 spring onions the end parts . Reserve the tops for garnish . Add cornstarch and a pinch more salt then mix until the potatoes become a dough and roll it into a log

Step 3
Cut the dough into 6 pieces then flatten with your hand and place two pieces of sliced cheese at the centre . Now pinch the potatoes into the middle and seal the pancake .
Step 4
Place each one on a frying pan on medium heat and cook until golden and crispy on both sides this will take 10-12 minutes !
