Instructions
Step 1
Begin by dicing 1/8 of an onion and chopping chives.


Step 2
In a bowl, crack 3 eggs, add your chopped veggies and season with salt and pepper.

Heat up your pan to low- medium heat.
Step 4
Drizzle a generous amount of oil, and make sure the pan is evenly coated.
Step 5
Pour in egg mixture until the pan is covered.
Step 6
Place your string cheese towards one side of pan.

Step 7
With your spatula, cover the string cheese and roll it gently.
Step 8
Pour in the leftover egg mixture and wait 2 minutes and roll it again.
Step 9
Repeat the last step if you have more egg mixture.
Step 10
Once all sides are cooked, slice into bite-sized pieces.
Step 11
Serve with ketchup or mayonnaise (optional) and enjoy!
