Step 1
Preheat the oven to 180°C or 375°F.
Step 2
Cook your crepes in a pan with a little oil until golden brown.
Step 3
In the middle, add the spinach/watercress or rocket. Add the pine nuts and cherry tomatoes. Add in the ricotta cheese.
Step 4
Put your crepe in the oven for a few minutes until the cheese lightly melts and the greens slightly soften.
Step 5
Sprinkle with salt and pepper.*Typically, women with endometriosis should avoid dairy. Ricotta, however, is made from the Whey of dairy and typically women have less of a reaction to it. If you, however, still have a reaction, replace it with goats feta or buffalo feta which is sweeter.
