1 ½ cupsrotini
uncooked

1 tablespoonolive oil

1onion
large, chopped

1bell pepper
chopped

2 cupschicken
cooked and shredded

1 x 14 ozcan diced tomatoes
Italian seasoned, undrained

14 ozartichoke hearts
quartered

6 ouncecan black olives
drained

1 teaspoondried Italian seasoning

2 cupsmozzarella
or other cheeses, shredded or chunked
Instructions
Step 1
Preheat oven to 350°F.
Step 2
Cook pasta according to package directions
Step 3
Meanwhile, Heat oil in large skillet, saute onions and peppers for a minute or two
Step 4
Add all other ingredients (including cooked pasta) except cheese, and stir.
Step 5
Add half of cheese, and stir gently
Step 6
Top with remaining cheese
Step 7
Bake 35 minutes
