Chocolate Marbled Banana Bread to use up my ripe bananas before traveling. To make this one a little more fun I swirled in some chocolate. But bloom it first (mix the cocoa powder with the warm butter).
All dairy-free and egg-free. 🫶🏽

6 Tbspaquafaba
canned chickpea brine
⅓ cuplight brown sugar

⅓ cupplain unsweetened yogurt
plant based
¼ cupavocado oil
or vegan butter, melted
1 Tbspvanilla extract
1 Tbspbaking powder
½ tspbaking soda
½ tspsalt
½ tspcinnamon
275gall-purpose flour
spoon & leveled, sifted
¼ cupdutch-processed cocoa powder
2 Tbspvegan butter
warm, melted
2 Tbsplight brown sugar
packed
¼ cupchocolate chips
unsweetened dairy-free
Instructions
Step 1
Preheat oven to 350F and line a 8in x 4in loaf pan with parchment paper.
Step 2
To a large mixing bowl, add the aquafaba and brown sugar. Whisk vigorously to combine until foamy.
Step 3
Add in bananas and mash with your whisk until mostly smooth and mix to combine. Stir in the yogurt, oil, vanilla extract, baking powder, baking soda, salt and cinnamon until combined.
Step 4
Pour in the flour and with a spatula, fold the flour into the wet ingredients, until mostly combined. Pour about a little more than a third of the batter into a separate mixing bowl and set aside.
Step 5
Combine the cocoa powder and melted butter together in a small bowl to bloom the chocolate. Pour it into the bowl with a third of the batter along with the sugar and fold to combine.
Step 6
With a large scoop, alternate dollops of the plain batter and chocolate batter inside of the loaf pan. Top this layer with alternate dollops following the same pattern (if the dollop below is plain, top it with a chocolate dollop). Repeat until you have used up all the batter.
Step 7
Use a chopstick to poke all the way into the batter at one corner and swirl in a figure 8 pattern 2-3 times. Bake the loaf for 45-50 minutes on the middle rack. Poke with a toothpick to check for doneness. Allow the bread to cool in pan for 15 minutes, then carefully remove the loaf from the pan and finish cooling on a wire rack.
