Instructions

Step 1
In a large bowl mix eggs, milk, and salt together. Add one cup of flour and mix. Add additional flour as needed, a small spoonful at a time, until the dough forms a ball, but is still slightly sticky.

Step 2
Turn dough out onto a floured surface. Flour hands and knead the dough, for about 3-5 minutes or until it's no longer sticky, about 3-5 minutes. Rest for 10 minutes.
Step 3
Cut dough into quarters. Lightly flour counter and roll dough until it’s paper thin. Use a sharp knife or pizza cutting wheel to cut the noodles. You can also use a pizza cutting wheel being careful to keep the widths the same. The rolling pin can also act as a straightedge.

Step 4
To cook: Add them to a pot of boiling water or soup and cook for about 2-3 minutes.
