Instructions

Step 1
Heat the oil in a non-stick frying pan and add the onion and pepper. Cover the frying pan with a lid and cook for 5-10 minutes or until the onion and pepper are soft.
Step 2
Add the minced beef to the pan, season and add the chili powder. Cook over a medium heat.
Step 3
Once the beef is cooked, add in the tomato puree and beef stock and allow it to dissolve.
Step 4
Stir in the chopped tomatoes and kidney beans, and cook for 5-10 minutes or until pipping hot.
Step 5
Serve with rice and cheddar cheese.
