Kurbis Suppe (German Pumpkin Soup)
Our family's favorite pumpkin soup recipe that we learned while living in Germany.

Step 1
Saute the onions in the butter and deglaze with the stock and wine. Add the pumpkin meat and cook covered for 20 minutes. Puree with the blender (add a little more water if necessary, depends on the dryness of the pumpkin meat). Add lemon juice, salt, pepper, sugar, Tabasco, heavy cream and creme fraiche. Mix everything well again and season to taste. Garnish with a little more sour cream, pumpkin seeds and chives to serve.
