Instructions

Step 1
Finely chop carrot onion and celery and Sweat then in a little oil in a big pot . Then add 2 liters of a broth of your choice I like veggie broth . Bring this to a boil

In a bowl mix melted butter eggs and semolina nutmeg and salt and pepper to taste and let it sit five minutes . Turn the pot down to medium low as you don’t want it bubbling when you put the dumplings in Then use a tablespoon spoon dipped in broth and pull spoonfuls up the side of the bowl keep pulling until you have a smooth oval shape( you can also do this with two spoons if it’s easier ) then put the dumplings into the pot of water and stir to keep them moving these will swell up so make sure you are using a very large pot

Cook covered for about 15 minutes ( make sure they don’t move or boil or they will break ) then once cooked let them sit 15 more minutes to absorb the liquid and swell up ! Serve and enjoy
