Instructions
Step 1
Preparation: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
Step 2
Oat Flour: If you haven't already, grind the oatmeal in a blender or food processor until it reaches a flour-like consistency.
Step 3
Chia Egg: In a small bowl, mix the chia seeds with 6 tablespoons of water. Let it sit for about 10 minutes until it forms a gel-like consistency. This will act as a binder in the bread.
Step 4
Banana Mixture: In a large mixing bowl, mash the ripe banana until smooth. Add the oat milk and apple cider vinegar to the banana and mix well.
Step 5
Dry Ingredients: In another bowl, combine the oat flour, baking soda, baking powder, and salt (if using). Mix well.
Step 6
Combine: Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in the chia egg.
Step 7
Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Place the pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 8
Cool: Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. After that, transfer the bread to a wire rack to cool completely.
Step 9
Serve: Once cooled, slice and enjoy your vegan oatmeal bread with your favorite spread or as is!
